The name KITAVA is inspired by a small island in Papua New Guinea, whose people are some of the healthiest in the world.
Their exceptional health and absence of disease has been attributed to their traditional diet, which consists entirely of ingredients from Kitava’s natural surroundings. Leafy greens, root vegetables, wild fish, and healthy fats (like coconut) are consumed on a daily basis, with no reliance on packaged or processed foods.
Kitava perfectly represents our belief that a healthy diet is central to optimal health, as well as our focus on fresh, unprocessed, and health-promoting food. It also connotes a time when healthy eating was a byproduct of our culture and natural surroundings, while giving a nod to the traditional food cultures and cooking methods that inspire our cuisine.
Like the isolated island of Kitava, our restaurant serves as an oasis and an escape from the standard American diet. We aim to create a gathering place that brings people together to enjoy nourishing, delicious food, in an environment that promotes and encourages healthy living.
